Pink Grapefruit & Thyme Lemonade

Are you ready for the most refreshing drink? The summer has finally reached out to Copenhagen, which in other words mean → It’s finally time for cold drinks while soaking up some vitamin D.

We’ve had such a cold, rainy and super confusing summer so far, but the summer has finally landed and I keep my fingers crossed that it’s here for good.

I can’t help but throw back to our trip to Mallorca last summer, while drinking this Pink Grapefruit & Thyme Lemonade

I can’t believe it’s already been a year since we traveled to the beautiful Island of Mallorca. So many things have happened since that time. I’ve accomplished so many things and I have learned so many things about myself.

The past year has been filled with so many wonderful and challenging things  → like moving into our lovely apartment, learning so much about self-care and self-love, quitting my full-time job and finally focusing on more important things in life.

The next year is probably going to be just as crazy as this one, as I’m about to study photography for the next 6 months. I can’t wait to explore my camera and probably learn a thing or two about myself.

Pink Grapefruit & Thyme Lemonade

Yield 10 glasses

Ingredients

  • 1/2 cane cup sugar 
  • 2 cups water  
  • 3 cups sparkling water 
  • 2 pink grapefruits
  • 2 limes 
  • Ice cubes 
  • 6-8 fresh thyme sprigs 

Instructions

  1. In a medium saucepan heat water and sugar until the sugar dissolves.  
  2. Cut grapefruits and one of the limes in half and juice. 
  3. In a big bowl, mix sirup, juice and sparkling water.
  4. Thinly slice the other lime and arrange in glasses along with ice cubes and fresh thyme sprigs. 
  5. Pour the lemonade into the glasses and serve cold.
